Vegetarians—too often limited to a haphazard meal of sides and carbs—rejoice when they taste the fresh and inventive dishes at Blue Sage (no “mock” meat, here!). Start with blue corn tacos stuffed with grilled asparagus, cheese and sun-dried tomato pesto, and go on to the trio of macadamia black bean cakes with grilled hoisin pineapple and red quinoa-black rice pilaf and served with a mango barbeque glaze. It’s a rare combo: vegan and delicious.
